Kale Potato Soup with Roasted Garlic

While I often associate kale as a winter crop, really it can be used and enjoyed the whole year round.  However, when you pair it with potatoes, add roasted garlic and serve it in a soup, the whole idea shouts winter comfort.

This soup was created for The Little Plantation’s event on Instagram where, on Day Two, food bloggers who joined the #foodphotoinsta were challenged to create a Green Soup.  My Green Smoothie on Day One was somewhat of a disorganized scramble, so I was determined to do much better with this one.

And what was the verdict?  This soup and photoshoot was an absolute dream!  Everything went perfectly and I snapped one of my best photos yet.  I couldn’t have been more thrilled!!

This recipe creates such a simple soup, but is absolutely delicious, nutritious and warms you from the inside out, perfect for this winter season.

Kale and Potato Soup with Roasted Garlic

A dreamy green soup with a healthy punch of flavour and sooo easy to make!

  • 1/2 teaspoon extra-virgin olive oil (for brushing garlic bulb)
  • 1 bulb garlic
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 4 cups vegetable stock
  • 1 pound potatoes, preferably Yukon gold, cut into large pieces
  • 1 bunch of kale, preferably lacinato, ribbed and roughly chopped


  1. Preheat oven to 400ºF.  Brush the bulb of garlic with olive oil, place on a parchment lined baking sheet, or a baking pan.  Roast for about 20-25 minutes, until done.

  2. In a large saucepan over medium-low heat, place the 1 tablespoon olive oil.  When hot, add onion and sauté until softened, about 5-7 minutes.

  3. Meanwhile, heat vegetable stock in a pot.

  4. When onions are done, add vegetable stock and potatoes and simmer until the potatoes are soft, about 15-20 minutes.

  5. Add kale to the saucepan and simmer another 5 minutes

  6. Peel garlic and add to the saucepan, cooking another 2-3 minutes.

  7. Remove soup from pot and pureé in a blender or Vitamix until well blended and smooth.

  8. Return to pot and heat.  Serve hot with bread, or your choice of accompaniment.

    1. I’d only had it in a Portuguese Kale Soup before so this was a new creation to finish off some of the garden produce. So glad I tried it! It’s a keeper. And the lemon is a great idea!

    1. Thanks so much for your comments! The overhead photo is my all time favourite photo, at least so far. The challenge was so beneficial. I feel my photography improved so much because of it.

  2. My friend is Portuguese and I just had her mom’s Potato and Kale soup (Caldo Verde) for the first time this winter. It is such a rich, creamy soup. Total comfort food. Your version is beautiful!

    1. I love Portuguese Kale Soup but since I’ve been trying to be vegetarian, I haven’t had it because of the sausage. I really miss it though. This soup is definitely vibrant and creamy for a cold winter day!

    1. It’s is green, isn’t it, and I did very minimal touch-ups. I think it’s because of the Lacinato kale I used which is a very deep green. It’s interesting how many simple recipes can be absolutely delicious!

    1. Fortunately we’ve gone from freezing to 23ºC in a week so it looks like spring is here. This soups is great for anytime though. I hope you like it!
